These cookies are soft, cakey, and packed with colorful sprinkles—perfect for kids (and grown-ups) who love a good Funfetti moment.


I made these for my nephew’s Ninja Turtle-themed birthday party, and y’all are getting the first taste of this new variation of my go-to cookie dough. So grab a cup of coffee (don’t forget it in the microwave like I do! 😂) and let’s get baking!

Birthday Cookie Recipe


Ingredients

Wet Ingredients:

  • 1 cup (2 sticks) salted butter, softened (if using unsalted, add 1 tsp salt)

  • ½ cup light brown sugar, packed

  • ¾ cup white granulated sugar

  • 2 whole eggs + 2 egg yolks

  • 2 tsp vanilla extract

Dry Ingredients:

  • 3 ½ cups all-purpose flour, sifted

  • ⅓ cup cornstarch

Mix-ins:

  • ½ cup sprinkles (or more to taste)


Instructions

Step 1: Cream the Butter & Sugars

  1. In a large mixing bowl, beat butter, brown sugar, and white sugar together until light and fluffy. (Pro tip: Whip it long enough that the color actually lightens—this makes for soft cookies!)

Step 2: Add Eggs & Vanilla

  1. In a separate bowl, crack 2 whole eggs and 2 egg yolks. (I always crack mine into a separate bowl just in case!)

  2. Add vanilla extract and whisk.

  3. Slowly add the egg mixture to the butter and sugar, mixing until just combined.

Step 3: Prepare the Dry Ingredients

  1. In another bowl, sift together flour and cornstarch.

  2. Slowly add dry ingredients to the wet mixture, about 1 cup at a time, mixing on low speed (unless you want a flour explosion in your kitchen 🤣).

Step 4: Fold in the Sprinkles

  1. Toss ½ cup sprinkles with a little bit of flour (this helps them stay evenly distributed in the dough instead of sinking to the bottom).

  2. Gently fold the sprinkles into the dough.

Step 5: Roll & Chill the Dough

  1. Place dough between two sheets of parchment paper.

  2. Roll out to ¼ to ½ inch thickness.

  3. Transfer to a baking sheet and freeze for 10-15 minutes (this makes cutting shapes way easier!).

Step 6: Cut Out Cookies & Bake

  1. Preheat oven to 375°F (190°C).

  2. Use cookie cutters to shape your cookies.

  3. Place cookies on a parchment-lined baking sheet.

  4. Bake for 7-8 minutes (check them at 7—every oven is different!).

  5. Let cool on the pan for a few minutes, then transfer to a wire rack.

🎂 Chill the Dough: Freezing the dough before cutting helps it hold its shape.🌈 Use Any Sprinkles You Love: I used India Tree’s dye-free sprinkles, but classic rainbow jimmies work great too!🧡 Roll Evenly: Use rolling guides like cake dowels for uniform cookies.
