Hey y’all! Welcome back to Sarah Grace Cookie Co, where we bake with love, laughter, and just a little bit of chaos. Today, I’m sharing a Birthday Cookie Recipe that’s guaranteed to bring smiles to any celebration. 🎉

These cookies are soft, cakey, and packed with colorful sprinkles—perfect for kids (and grown-ups) who love a good Funfetti moment.
I made these for my nephew’s Ninja Turtle-themed birthday party, and y’all are getting the first taste of this new variation of my go-to cookie dough. So grab a cup of coffee (don’t forget it in the microwave like I do! 😂) and let’s get baking!
Why You’ll Love This Birthday Cookie Recipe
✔️ Soft & Gooey – A mix of butter, cornstarch, and extra egg yolks makes these cookies melt-in-your-mouth good.✔️ Easy to Make – No fancy techniques, just good ol’ homemade baking.✔️ Customizable – Use any sprinkles or cookie shapes you like!

Birthday Cookie Recipe
Ingredients
Wet Ingredients:
1 cup (2 sticks) salted butter, softened (if using unsalted, add 1 tsp salt)
½ cup light brown sugar, packed
¾ cup white granulated sugar
2 whole eggs + 2 egg yolks
2 tsp vanilla extract
Dry Ingredients:
3 ½ cups all-purpose flour, sifted
⅓ cup cornstarch
Mix-ins:
½ cup sprinkles (or more to taste)
Instructions
Step 1: Cream the Butter & Sugars
In a large mixing bowl, beat butter, brown sugar, and white sugar together until light and fluffy. (Pro tip: Whip it long enough that the color actually lightens—this makes for soft cookies!)
Step 2: Add Eggs & Vanilla
In a separate bowl, crack 2 whole eggs and 2 egg yolks. (I always crack mine into a separate bowl just in case!)
Add vanilla extract and whisk.
Slowly add the egg mixture to the butter and sugar, mixing until just combined.
Step 3: Prepare the Dry Ingredients
In another bowl, sift together flour and cornstarch.
Slowly add dry ingredients to the wet mixture, about 1 cup at a time, mixing on low speed (unless you want a flour explosion in your kitchen 🤣).
Step 4: Fold in the Sprinkles
Toss ½ cup sprinkles with a little bit of flour (this helps them stay evenly distributed in the dough instead of sinking to the bottom).
Gently fold the sprinkles into the dough.
Step 5: Roll & Chill the Dough
Place dough between two sheets of parchment paper.
Roll out to ¼ to ½ inch thickness.
Transfer to a baking sheet and freeze for 10-15 minutes (this makes cutting shapes way easier!).
Step 6: Cut Out Cookies & Bake
Preheat oven to 375°F (190°C).
Use cookie cutters to shape your cookies.
Place cookies on a parchment-lined baking sheet.
Bake for 7-8 minutes (check them at 7—every oven is different!).
Let cool on the pan for a few minutes, then transfer to a wire rack.

Tips for the Best Birthday Cookies
🎂 Chill the Dough: Freezing the dough before cutting helps it hold its shape.🌈 Use Any Sprinkles You Love: I used India Tree’s dye-free sprinkles, but classic rainbow jimmies work great too!🧡 Roll Evenly: Use rolling guides like cake dowels for uniform cookies.
These cookies were a huge hit at my nephew’s party, and I just know they’ll be a winner at your next birthday celebration too! 🎈 Let me know if you try this Birthday Cookie Recipe—tag me on social media with your colorful creations!
